Could you give me a brief explanation of how to set up a dual-screen or multi-screen set up?

I have been trying to do so for a little bit now.

It's very easy to do. Most new graphics card released today come with two ports. Windows will automatically detect both ports and allow you to use one by itself or both as long as a second screen is attached.

I run two graphics processors with nVidia SLi technology on them and each card has 2 ports. So I could have a total of 4 displays. One port is still left open. In fact I'm thinking about putting a projector in its spot.

Hope this helps. If you ever set up a multi-display system, make sure you run UltraMon. Amazing screen management for more then one display.

Extended desktop has been a regular window feature for a long time. I think Windows 98 introduced it.
